§       4 Eggs beaten with pinch of salts

§       4 cups Basmati Rice or normal white rice

§       Salt to taste

§      2 Tsp Soya sauce

        Sesame seeds for garnish

         4 Spring onion sliced

INSTRUCTIONS

Let's get started!

1.      Heat a wok or a skillet over high heat; add 1 Tbsp cooking oil and swirl to coat. Pour beaten eggs into the wok and scramble.

2.      When the 4 eggs are cooked 3/4 way, add remaining 2 Tbsp cooking oil and cold basmati  rice. Breakdown rice and mix it with eggs.

3.      Add soya sauce around the edge of the wok or pan , so it will burn slightly for the smoky  flavor. Add salt to your taste and spring onion and mix everything well. Reduce heat to low if you need to.

4.       Turn off the heat, stir in spring onions. Garnish with sesame seeds if you’d like to! Enjoy with any other dishes you decided to serve with!

Notes

For the rice, it's important that it is relatively dry. If using fresh-cooked rice, spread the rice out into a thin layer on a rimmed baking sheet immediately after cooking and allow to steam-dry for at least 15 minutes. Alternatively, store rice in an uncovered container in the refrigerator overnight. Break large rice clumps up with your hands before beginning.

Make-Ahead and Storage

The rice can be pre-cooked, cooled, and refrigerated in an airtight container overnight. The fried rice is best made right before serving.
