How to make veg pulao


                                          



Veg pulao Preparation

1. Begin by rinsing 2 cups basmati rice in water until it runs clear of starch. Next, soak the rice in enough water for 30 minutes.

2. After 30 minutes strain the rice of all the water and keep aside.

 3. Oil and Ghee for cook

4. Keep all the whole spices aside: Bay leaf 1,Cinnamon 2 inch, cloves 4 and green cardamom 3

5. Cumin seeds 1 Tsp, Fennel seeds 1 Tsp, Chopped onion 2,Ginger garlic paste 1 tsp and green chilies 5 to 6

6. Veggies like Chopped carrot 1/3 cup, chopped beans 1/2 cup, chopped potato 1/2 cup and  cauliflower 1/2 cup

7. Garam masala 1 Tsp, Few mint leaves , few coriander leaves  and beaten curd 2 Tbsp

8. Water 4 cups, Lemon juice 2 Tsp and salt 1.5 Tsp

9. Few tsp of saffron- soaked milk (optional)

How to make veg pulao with step by step photo:

1. In a large kadai ,heat 2 tbsp. ghee and 2 tbsp. oil and let it heat




2.Add bay leaf, cinnamon, cloves green cardamom, cumin seeds and fennel seeds and fry it for few seconds on medium flame.







3. Add chopped onion and stir it




4.Add ginger garlic paste and mix it well




5 Green chilies and fry it for 2 to 3 minutes on medium flame.




6.Add carrot, Chopped beans, potato and cauliflower then mix it well





7.Close the lid and cook the vegetables for 4 to 5 mins on medium flame.





8.After 5 mins open the lid and stir it




9.Now add garam masala, mint leaves, coriander leaves and beaten curd and stir it.









10. Add the soaked rice 



11.Saute it gently on low flame





12. Add water ,lemon juice and salt as per your taste and mix it well




                                   












13. Close it with a lid and cook for 10 to 15 mins on medium flame.






14. After 15 mins open the lid and  spread the few tsp of saffron soaked milk all over(Optional) and mix it gently








15. Again close the lid and cook for a minute




16.Open the lid and stir gently





17. It's ready to serve and turn off the flame.








Tips:
  • Do not skip fresh mint leaves(pudina) as it the next key ingredient that infuses aroma to the veg Pulav.
  • Always use good quality Basmati rice.
  • Using ghee is optional but it gives good flavor or aroma to the Pulav.
Serving Ideas:
  • Indian vegetable pulao is traditionally served with cucumber raita, or boondi raita  papad and with pickle.
