SPICY AND FULL OF VEGGIES, MUMBAI’S TAWA PULAO IS A POPULAR STREET FOOD FROM INDIA. IT’S A SIMPLE DISH WHICH CAN BE READY IN MINUTES. WORKS PERFECTLY FOR THOSE DAYS WHEN YOU WANT SOMETHING QUICK AND EASY FOR LUNCH OR DINNER!

TODAY I AM SHARING WITH YOU THE RECIPE OF MUMBAI’S POPULAR STREET FOOD – TAWA PULAO. FOR THOSE WHO DON’T KNOW HERE’S THE LITERAL TRANSLATION. TAWA REFERS TO A FLAT CONCAVE SHAPED PAN COMMONLY USED IN INDIAN COOKING. WE USE IT ALL THE TIME TO MAKE ROTI, PARATHA ETC. AND PULAO AS YOU WOULD HAVE GUESSED IS PILAF. ANY SPICED RICE DISH WITH VEGETABLES TO AS PULAO. SO THIS PULAO IS MADE ON A TAWA AND HENCE CALLED TAWA PULAO. IT’S SPICY, LOADED WITH VEGGIES AND REALLY DELICIOUS! IF YOU HAVE BEEN TO MUMBAI, CHANCES ARE YOU MUST HAVE EATEN THIS DISH.

LET'S GET STARTED - RECIPE DETAILS 

Preparation time 10-15 minutes 

Cooking time 10-15 minutes 

Servings 2 to 3



INGREDIENTS NEEDED 

1 cup rice or 500gram 

•       1Tsp   Cumin seeds

2 onion

1 tsp ginger garlic paste

3 Tomatoes 

1 capsicum

•       3 Boiled potatoes 

8-10 beans or half cup

Handful of frozen peas or half cup

•       1/2Tsp turmeric powder 

•       1/2Tsp Red chilli powder 

•       1Tsp Garam masala

2 tsp pav bhaji masala powder

•       Oil

•       Salt to taste 

•       Coriander leaves 

•       2Tsp Lemon juice 



METHOD 

STEP 1

✔️1 large Onion, roughly chopped 


✔️Tomatoes - finely chopped 


✔️French Beans - cut into small cubes


✔️Capsicum - cut into small cubes


✔️Ginger garlic - fine paste


✔️Potatoes -cut into small cubes


✔️Coriander leaves - cut into small pieces 


✔️Rice - wash - soak it for 15-20 minutes - drain the water - Keep it aside until needed.


STEP 2 COOK RICE BY DRAINING METHOD

◾Boil about 4 cups of water in a saucepan. Add soaked rice and little salt. Cook it on high flame for approximately 12-15 minutes until rice are 85% cooked. Drain the water - transfer the rice into a colander - keep it aside.


JUMP TO RECIPE 👇👩‍🍳



•Add 1 tbsp oil in a pan and saute 1 tsp cumin till they get browned.


• Add chopped onions (1 medium onion – 50 grams) and saute till translucent.




•Add ginger garlic paste (½ inch ginger + 2-3 garlic), made into a paste in a mortar-pestle or 1 tsp ginger garlic paste.

•Saute till their raw aroma goes away. The ginger-garlic paste has to be sauteed well. Otherwise, the raw aroma is felt even later and might not go well with some folks.

• Add 1 medium chopped green bell pepper (capsicum),chopped beans and green peas.

•Mix and stir it for 2 to 3 minutes on medium heat. 



•Add 3 chopped tomatoes and mix it.



Close the lid and cook it for 3-4minutes.



After 4 minutes open the lid and mix it.




•Add 1/2 tsp turmeric powder and 2tsp red chilli powder. Stir and saute it well.




•Add the boiled medium size potatoes and mix it well.


•Add 1Tsp Garam masala and 2Tsp Pav bhaji masala and mix it properly.

•Stir and then add the 500 gram drained cooked  rice and salt as per taste and mix it properly.



•Add coriander leaves and 2tsp lemon juice and mix it properly.


•Close the lid and cook for 2 minutes on low flame. 


•After 2 minutes open the lid and mix it gently. Turn off the gas flame.

•Garnish Tawa pulao serve with yogurt/onion tomato Raita or 
Pickle.
